The number of channels corresponds to the number of individual speakers the amp supports. For example, a 4 channel amplifier would support 4 individual speakers, traditionally installed as a pair in the front and a pair in the rear.
It's always a good idea to research the type of amplifier you need before you buy. The long and the short is car amplifiers can be split into three different types - full range amplifiers, mono amplifiers, and system amplifiers. So what's the difference?
Full range amplifiers - Amplify the entire audio spectrum (from high frequency notes to low frequency notes) and are generally used for powering speaker pairs.
Mono amplifiers - Designed to handle the deep, low frequency, bass sounds monoblock amplifiers provide the power to run a subwoofer.
System amplifiers - These combine full range and mono amplifiers giving the ability to power speakers and a subwoofer all from one unit.

Always take care when you're selecting your amplifier, as increasing the power of the sound coming out of your audio device puts more pressure on your speaker components. If you're looking to purchase an amplifier for your car, make sure you have a speaker system that can hack the extra power, otherwise you will end up damaging it.
